It’s that time of year again! Saskatoon berries are ready for the pickin’! For the second year in a row, we picked Saskatoon berries at Crystal Beach Orchards in Harris. Whenever we pick fresh berries, I get all hoarder-ish, stockpile them in the freezer and save them. I tell myself I’m saving them for something special. Well what’s special? Then it’s winter and I have buckets in the freezer and let’s be honest, I’m not about to whip up a pie, so I don’t know what I am saving them for!
This past winter I got into the routine of making my daughter porridge for breakfast. I needed something healthy and quick that I could make at home and take with her to daycare. I started adding our frozen Saskatoon berries that we picked last summer with the porridge, and sometimes a scoop of yogurt if she was lucky 😉 I’d add the boiling water and frozen berries to the oatmeal in her Tupperware bowl, add a scoop of yogurt, put the lid on and take to daycare. Super easy and she loved it! That’s when I realized, why save them?!
This year I picked 13 lbs and we’ve already eaten lots! Here are 6 of our favourite ways to use Saskatoon berries, fresh or frozen. Some of the simplest ways to eat them are how we enjoy them best!
Most of our Saskatoon berries from last year were enjoyed with porridge. From frozen, add before you add boiling water, or enjoy fresh after you’ve added water. Top with a scoop of yogurt for extra creaminess.
This one is my new favourite! I am not a huge breakfast person, but these oats are oh so delicious & super easy to make. I added 1/2 cup oats, 1 tsp of maple syrup, 1 tsp ground flax seed, half a banana, 1-2 tbsp Saskatoon berries and 1/2 cup milk in a glass container. Stir very well, place in the fridge overnight and eat cold the next morning. Seriously, so delicious and they keep well for a few days and get even more flavourful.
Smoothies are a great way to get your fruit intake, especially in the winter time. We made a lot of smoothies this winter with our frozen Saskatoon berries, raspberries and bananas. If you like it creamy, you can add yogurt or milk. If you are looking for extra liquid without adding milk, try watermelon or fresh oranges. We often topped it with hemp seeds too. Fresh is best! Instead of being a hoarder of the berries, like me, enjoy them fresh! Eat plain, add on cold cereal, yogurt, on top of pancakes, fruit salad, the possibilities are endless!
We are absolutely in love with our Cuisinart Ice Cream Maker! And no, this is not sponsored! We’ve been on a mission to clean up the freezer so we made mango Saskatoon berry ice cream! You could add Saskatoon berries to almost any type of ice cream or even just top them with vanilla ice cream.
Another super simple and quick dessert – use fresh or frozen Saskatoon berries. We could have found a legit recipe online, but we like to wing it. We added about 2-3 cups berries in the bottom and topped with a mixture of about 2 cups quick oats, 1/4 cup melted butter, 1/4 cup brown sugar, dash of cinnamon and a dash of nutmeg. Baked at 350 degrees C for about half hour-ish. It was crumbly, but delicious. Especially when it was topped with our homemade ice cream!
