It’s that time of year! Rhubarb crumble, loaf, muffins, frozen rhubarb, stewed rhubarb, you know where this is going. Our rhubarb was the first plant I saw growing out of the snow this year and now it’s huge!
Since I’ve started harvesting our rhubarb I thought I would share my favourite rhubarb loaf recipe with you. I think it’s from my high school cooking class, but that was a long time ago, so I’m not 100% certain đŸ™‚ Regardless, I hope you enjoy!

My Favourite Rhubarb Loaf Recipe

Ingredients & Directions

Preheat oven to 350 degrees F.

Mix together in large bowl:

  • 1 1/2 cup brown sugar
  • 2 1/2 cup flour
  • 1 tsp salt
  • 1 tsp baking soda

Add 1 1/2 cups finely chopped rhubarb (I used 1 cup rhubarb and 1/2 cup strawberries).

In a separate bowl, mix together:

  • 2/3 cup oil
  • 1 egg
  • 1 cup sour cream
  • 1 tsp vanilla

Add liquid ingredients to dry ingredients all at once. Mix until just moist. Place in 2 greased loaf pans and sprinkle with topping:

  • 1/4 cup brown sugar
  • 1 tbsp melted butter

Bake for one hour. Enjoy!
